Meals The Freeze Well

The kids and I spent the day cooking.  One of my friends in having surgery and I wanted to make up a few meals for her to have in her freezer during her recovery time.

Here is what we made:

Chicken Noodle Veggie Soup
(This is a favorite with my kiddos!)

Combine in a large pot:
1 can each of carrots, corn, peas, green beans, & garbanzo beans
1 Large can chicken broth
3 frozen boneless chicken breasts
salt & pepper

Bring to a boil over a medium heat and then reduce to a simmer for 3 hours covered.

Remove the chicken and cup into bite size pieces.  Return pieces to soup.

Add 2 cups rigatoni pasta.  Turn temperature back up to bring it to a boil.  Cook for 6 – 8 minutes.  (Add water when you add the pasta if you think it needs more liquid.)

Let cool and freeze.

Heat and eat when ready!

Chicken & Ham Roll-Ups

Prepare 2 cups of rice as instructed on the package.  Put in the bottom of casserole dish.

Combine 2 cups of cooked white meat chicken with 1/3 can of Cream of Chicken Soup.
Scoop a spoonful of the chicken mixture into a piece of ham and roll it up.  Place rolls on top of rice.  Add milk to fill up the Cream of Chicken soup can, stir and pour over ham/chicken rolls.  Cover with shredded cheese.

Let cool and freeze

Bake at 350 degrees for 20-30 minutes when ready to serve.

Baked Spaghetti
(Another kid pleaser at out house!)

Cook 1/2 package of angel hair pasta as directed on package. Drain and place in a casserole dish.

Add 1/2 cup Parmesean cheese, 1 cup shredded Mozerella cheese and 2 eggs well beaten.  Stir well.

Let Cool and freeze

Bake at 350 degrees for 20-30 minutes when ready to serve.  Heat your favorite pasta sauce and serve over the top.
