Asian Salad

This is my favorite new recipe for Summer:

Asian Salad

1 head cabbage
1 bunch scallions
1 package Ramen (vegetable or chicken flavored)
5 ounces slivered or crushed almonds

1/4 cup rice wine vinegar
1/2 cup Canola oil + 2 t sesame oil
1/2 cup sugar or Splenda
3 tablespoons soy sauce

Ramen seasoning packet

Chop and mix the vegetables. Refrigerate until served. Crush the Ramen Noodles and almonds in large baggie with rolling pin. Set aside. Mix vinegar, oil, sugar, soy sauce, and seasoning packet. Shake up well. Just before serving, mix the vegetables, crunch and dressing and mix together well.

serves 6

This is sooo yummy!  It is all I want to eat when it is HOT….I also like it with grilled chicken cut up in it and with mandarin orange slices in it.  So cool and refreshing!
